Vegan Chocolate Cake
I thought I could sneak in this cake even if it`s not completely healthy. We all need to spoil ourselves every now and again.
I couldn’t help myself with this one. We are having guests and I want to make a special dessert. I adapted this from a recipe I found on Chocolate Covered Katies website. I have tried to keep it simple, healthy (ish) and still tasty. I do believe it turned out much better than I had predicted with a slightly gooey center. I didn’t frost it as I don’t think it needs it, but maybe that is sacrilegious for some. Drizzle with maple syrup if you really need something on top.
1 Cup Organic Spelt Flour
1 Cup Organic Coconut Flour
1 teaspoon of salt
2 teaspoons baking powder
100g vegan chocolate
1 cup coconut sugar
½ cup mashed banana
½ cup canola or coconut oil
1 Egg substitute
1.5 cups of water
2X 20cm tins, Preheat oven 180 degrees or 160 in a fan forced oven.
Mix the dry ingredients together, Mix the wet ingredients together, Combine the two and separate into the two tins and bake in a moderate oven.
Cook for 22 minutes or until tooth pick comes out clean.
I didn’t layer the cake for the picture, but you can always fill with a jam filling.
