This is such a simple but at the same time delicious dish, jam packed with B12, iron and CoQ10. After a long day at work I can still come home and prepare this dish in about 30 minutes.
2 X 150 g Wild Caught Salmon Fillet
2 Tbs Pumpkin Seeds
1 Tbs Sesame Seeds
Bunch of Spinach
1/2 Head of Broccoli
1 Zucchini
1/2 Cup of Peas
1 Onion
1/2 Sheet of Nori
Method:
Cut the Nori in half and wrap it around the salmon. Toast the seeds in a fry pan for a few minutes then cut the pumpkin seeds up and coat the two ends of the salmon. For the veg dice the onion. Cook for 5 minutes in a little coconut oil. Add the rest of the veg and cook for further 10 minutes on medium heat. Pan fry the salmon fillet, 4 minutes on each side and serve. Sprinkle with remaining seeds.
